Borealis Breads is proud to be taking a
leadership role in the use of Maine agricultural
products.
All the whole wheat flour we use, over 80,000 pounds per year,
comes from Maine. It's grown and milled by Matt Willliams
at Aurora Mills in Linneus, near Houlton.
We are currently using organic Maine-grown wheat
from Aurora Mills in several of our breads, including
the Rustic Baguette, French Peasant, Multi-Grain,
and Aroostook Wheat.
These breads are available throughout Maine
and New Hampshire. These and other products can be
found at our retail stores in Maine.
There are three wheat varieties grown on Matt's farm:
‘Maxine’ winter wheat, and ‘Grandin’ and ‘AC Walton’ spring
wheats. The wheat is cleaned at the farm and milled there on
a twenty-inch commercial Meadows mill.
