New Bread: Toasted Oat!
The 'research and development' are over, and our newest bread, Toasted Oat, is ready for prime time. Most oat breads are sweetened and a little soft. Here at Borealis we don't like to sweeten breads, but we did want to find a good way to use Maine-grown oats. Jim Amaral, founder and guiding spirit of Borealis, disappeared into the Waldoboro bakery, flung flour and oats in all directions for a while, and came up with Toasted Oat.
We test-drove Toasted Oat on a difficult track, the Common Ground Fair in September. The response was enthusiastic, to say the least. We couldn't make enough to satisfy the demand.
The secret is toasting the oats before adding them to just the right flour blend, using the Aroostook wheat flour and starter, and allowing it to rise for a really long time. It gives the bread a delicious, nutlike flavor that is great for toast, sandwiches or all by itself.
Look for it starting October 27 at your local
independent grocer or health food store that carries Borealis. If they don't have it, ask your grocer or
